Overview

The University of Missouri maintains a comprehensive monitoring program that includes regular inspections of all food service operations on campus. This includes Campus Dining, Intercollegiate Athletics, the MU Student Center, hospital dining services, sporting events, food trucks and all other retail and coffee shop locations.

Inspection Standards
All inspections are conducted in accordance with the 2022 Food Code, which follows the Hazard Analysis Critical Control Points (HACCP) framework. These inspections are designed to ensure a safe dining environment for all campus community members.

Questions or Complaints
While every effort is made to maintain high standards, accidents may occur. If you have any questions or wish to report a concern about a food service operation on campus, please contact the MU Sanitarian at (573) 882-7018. All complaints are investigated promptly, and the findings are shared with the reporting party.


Training Requirements

Food Handler Card
All employees working in campus food facilities must obtain a Food Handler Card within 30 days of their initial hire. Environmental Health & Safety (EHS) offers food safety classes 2–3 times per month. The Food Handler Card is issued upon completion of the class and must be always kept on file at the food service location.

Sanitation Certification for Persons in Charge
The Missouri Food Code mandates that any Person in Charge of a food service facility be certified in Food Protection Management. A “Person in Charge” is defined as any individual overseeing food service operations at any given time.

The Food Protection Management Certificate must be prominently always displayed in the food service area.
Additionally, a certified Person in Charge (PIC) must be present at all times during active food service operations.
